One of our most popular botanical spirits from the Highland Boundary range has always been the Birch & Elderflower combination. We offer this wonderful taste of Scottish wilderness in both a spirit and liqueur. Whilst both can be served and enjoyed simply over ice with a slice of lemon, now and then it’s fun to get a little creative and have a go at becoming your own botanical mixologist!
We love coming up with new cocktail recipes using our products. Even more so, we love to see what our lovely customers and fellow spirit fanatics come up with.

French Scots 75
Inspired by the Auld Alliance between France and Scotland, we present the French Scots 75 cocktail. French 75 is a popular choice on most cocktail menus but, of course, we had to bring some botanical influences into the mix and add something a little different to your usual glass of bubbles. Our recipe introduces playful flavours of citrus and floral essence whilst remaining light and refreshing - perfect for any celebration!
- 150ml Brut champagne or an equivalent
- 50ml Highland Boundary Birch & Elderflower spirit
- 15ml Lemon juice
- 1 Tsp Elderflower syrup
A twist on a classic cocktail, the Wild Appletini is a sip of summer in a glass. Its light, fruity punch is best enjoyed in the back garden on a sunny evening. We particularly love this recipe as it is super easy to create at home as it only requires a few simple ingredients. Shake all of the ingredients well with a cocktail mixer and strain through the ice. It's that easy!
- 150ml Cloudy apple juice
- 25ml Highland Boundary Birch & Elderflower spirit
- 10ml Calvados
- A sprig of mint and/or a slice of apple
Forest Tea Martini
It’s not every day that you get to infuse your tea with botanical spirits! But, for this recipe, it makes for a wonderful pairing with Earl Grey’s distinct flavouring of bergamot orange. We recommend leaving the tea leaves to infuse with the Birch & Elderflower spirit for around 1-2 hours for the best results. With a few additional sweet touches, this cocktail recipe promises to be a silky smooth blend for the taste buds.
- 25ml Sugar syrup (we use Hawthorn Flower Syrup)
- 50ml Earl Grey Tea infused Highland Boundary’s Birch & Elderflower spirit
- 25ml Lemon juice
- Slice of cucumber for garnish
Thanks to our good friend Jack from Scottish Mixology for creating this one! This cocktail recipe is a beautiful explosion of all things tropical with a hint of the Scottish Highlands. If you choose to infuse tequila with coconut as a rum alternative, then you’ll need to boil 25ml of tequila with 1tsp of coconut oil until fully dissolved. Leave to infuse in a sealed jar for 2-3 days before boiling once again and leaving to infuse for a further couple of days.

- 15ml Grapefruit juice
- 25ml Coconut rum or tequila infused with coconut oil
- 25ml Highland Boundary’s Birch & Elderflower spirit
- 25ml Pineapple juice
- Top off with a tropical soft juice or ginger ale of your choice
A Sweet Summer Daydream
Introducing one of our latest Highland Boundary cocktail recipes ‘A Sweet Summer Daydream.’ We conjured this one up as part of our recent collaboration with local artisan business Scents of the Wild. The cocktail is inspired by the launch of their new Sweet Serenity candle. Much like us, owner Rachel is also hugely influenced by the natural world around her when choosing flavours. Combining the floral fragrance of rose and the sweet kick of lemon sherbet. We knew straight away that the sweet and floral pairing of our Birch & Elderflower would be the perfect place to start in creating a cocktail for the occasion. Here’s what we came up with!
- 50ml Birch and Elderflower Wild Scottish Liqueur
- 25ml Rosehip Syrup
- 50ml Lemon Juice
- 25ml Birch and Elderflower Spirit
- 25ml Wild Rose Petal Syrup
- Lemon and Rose Petals to garnish
